The marinade is actually really strong, so doing it for more than about 12 hours is inadvisable. We've got people coming at noon, which is when I begin roasting the tenderloin on the grill. We're doing a late-lunch constant-snacking afternoon thing. That's the same reason I'm making tea now: I want it chilled for people by noon. Also, given the early start time, I'm just doing all my chores now. I prefer to sleep in and have a leisurely morning because I did all the extra shit now, rather than wake up and work work work work until people show up, then have to be on my feet the entire time they're here.

You are a smart man, sir. And marinade on just about anything is almost always awesome. We went camping last weekend and one of my buddies put some kind of marinade on some chicken and that shit rocked my face off.

By the way, I wish I could do that shit every weekend. It kind of sucks when it gets really hot and humid, but there's nothing like waking up early in the morning and sitting at the shore of the lake with a cold beer watching the sun come up and knowing that for just one day, no retard customers or anal-retentive boss is going to ruin your day

I'm actually a big believer in marinades over almost everything. When I do ribs, for instance, I brine them and then smoke them for a long time, but I don't add any sauce. There's just so much flavor that you can just have the meat, falling off the bone. This should be pretty interesting: it's actually an intense but pretty broad marinade; then you wipe it off and coat the tenderloin in a dry rub and then roast it for about an hour or so. So you get the sharpness and spice of the rub with a sweet/sour baseline marinade flavor. Should be good.

Also, I'm really excited because one of the people coming over is a friend of mine who did web design for a while, and after everyone else leaves, we're going to sit down with some vodka, wade through the code, and redesign my site with something that integrates more data and bells and whistles while retaining the core column of text and the spare white design.

Speaking of marinades, do you guys ever use Mojo? It's an awesome Cuban/Caribbean/South American citrus-garlic marinade. Really good on thin steaks. I often use it on cube steaks with a side of rice and beans.

Glad to see this thread is going, despite the fact that I'll probably be out soon.

Mojo's great because it's so intense (all the citrus) that you can marinate any pork or chicken in 30 minutes. Also, mushrooms absorb it really well. I love mojo for pork kebabs: just buy a tenderloin and cut it into cubes and throw a mess of mushrooms in there. It's also great with cheap thin pork chops (sear 'em on the grill for a little char and then just pull them off the grill and just devour 'em—I've seriously just grabbed whole chops off the Weber and stuffed my fat face), or, for your traditional Cuban fare, a whole chicken you roast in the oven or on the grill.

The only danger with mojo is that it's so intense you won't be able to taste anything but it, if you marinade much longer than one day. For good pork or chicken (tenderloins, breasts), 30 minutes is cool, but for stuff that's going to be tougher and need to be broken down (ribs, spareribs, tri-tip beef or other crummy beef cuts) by the acids, overnight is good. Personally, I always have a jug of it on hand (something like $3 for a couple gallons at Sam's) and will just dump it over some meat first thing in the morning and put the meat in the fridge, then everything's awesome come dinner time.

Also, be careful not to marinate anything in mojo in an aluminum bowl. The citric acid eats at the aluminum, and will make everything taste like metal. It's also not good for you. Use a ceramic, glass or stainless steel bowl or, if you're trying to be economical with your mojo, the whole Ziploc freezer bag thing.

I've never heard of that Mojo stuff. It's a brand... or just the name of a marinade recipe?

Edit... just looked it up. Sounds kinda like sour orange sauce that's really good on fish.

It's a traditional Cuban marinade made from lemon, lime and orange juices (although mostly just lime), garlic, oil and other spices. It's very tart, spicy and garlicky, and the high acidity basically just eats through tough connective tissue, so it makes an awesome marinade on tougher meat.

The authentic mojo is made with juice from sour oranges. It still has that little orangy taste, but its very acid and tart. 6 to 8 cloves garlic, thinly sliced or minced
2/3 cup sour orange juice or lime juice
(or equal portions orange juice and lime juice)
1/2 tsp ground cumin
Salt and freshly ground black pepper, to taste

Heat the olive oil in a deep saucepan over medium heat. Add the garlic and cook until fragrant and lightly toasted. Don't let it brown or it will be acrid tasting, just about 30 seconds should do it.

Add the sour orange juice, cumin and salt and pepper. STAND BACK; the sauce may sputter. Bring to a rolling boil. Taste and correct seasoning, if needed

Cool before serving. Mojo is best when served within a couple of hours of making, but it will keep for several days, well capped in a jar or bottle, in the refrigerator.

Use with Cuban sandwiches, boiled yucca, grilled seafood and meats, fried green plantain chips, etc.

I have seen recipes for mojo using cilantro in it, but that is not traditional to Cuban Cuisine.

(*) I prefer to add more lime juice than orange, as I like it very tart.

One o'the clock already. Gonna have one more taste of the jalapeño tequila. It turned out pretty good, nice fresh green jalapeños flavor, but it could be spicier. Next batch I'll add a habanero pepper too.
